Bluefish
Bluefish are pound for pound one of the hardest fighting fish in the ocean. They can be found all up and down the east coast from Maine to Florida and even into the Gulf of Mexico, but most commonly are found in the Mid-Atlantic region. While most of the bluefish caught are in the 2-6 lbs range, fish up to 18 pounds have been caught in Vineyard Sound. They generally show up in mid May on the flats areas around Nantucket Sound and are generally caught on top-water lures and shallow diving plugs. As the summer progresses they move into deeper water and are found mixed in with the striped bass. When they are in deeper water they can be caught regularly on both live and dead bait, as well as vertical jigs.
Bluefish have a much different flavor than any other fish found around the cape. They are a much darker and oilier fish than most, and while not for everyone, they can be fantastic if prepared properly. One of the most popular recipes is simply baking it with salt, pepper and olive oil or butter. I personally really like to put a little whole grain mustard on it when I bake it. While these are both good, probably the most popular way to prepare it is to smoke it. The flesh resists getting too dried out and has an incredible flavor if done right! If done properly it also makes a great pate.
